Size wise, very difficult to know unless you have a starting point. Some of my club mates are taller than me, but ride smaller bikes.
Would be advisable to go into as many bike shops as you can, with a wooden metre rule and start measuring some of the key distances.
I say take a wooden rule, because it makes the dealer think that you know what you are looking for and even if you don't he will give you sensible answers.
After a few shop visits, you will know what you are looking for. When looking at different bikes, it's those key distances above that you need to look for.

I would definetly suggest the DAS route, nothing is stopping you getting a when you have done that, but you then get the choice to take pillions and go on motorways if you wish, and when you have decided you are ready you can move to a bigger bike.
I know this may not help, but like others have said get your CBT out of the way first and then see how you feel about it.

Yeah, like has been said Just dont go nuts on your first bike. Dont go straight for a litre super sports, get a good starter bike and go from there.
It is a sobering statistic that a lot of people killed or seriously injured on bikes are 40 odd year old blokes who werent allowed a bike when they were Figures up to 60mph and even mph are staggering compared to normal cars.
If you can do the CBT seperately, or sort it with the school that if you dont like it then you get a refund for the DAS part. Some people dont like bikes when they get on them.

If you already run and play footie then you will be fine on a bike in terms of fitness. However if you've never ridden with gears on the road I would get some practise in and also perhaps try a Bikeability course google for local ones.
You should also get a copy of Cyclecraft which will help you a lot with the rules of the road and how to be a confident road user.
